Anna Higham's Irish Soda Bread

We had the best time chatting to Anna, who sadly will be ending her time at London’s Lyle’s & Flor to take the next step in her career. Perhaps her own bakery at some point in the future? Yes, but not any time soon. For now it’s lots of reading, resting, baking and enjoying a bit of time off after a load of hard graft!
INGREDIENTS
500g wholemeal flour OR 250g of wholemeal and then a mix of whatever other flours you have
100g oats
2 tsp bicarbonate of soda
2 tsp salt
400g of buttermilk OR 200g plain yoghurt and 200g milk
Parchment paper
Baking tray
METHOD
Preheat your oven to 200c.
In a large bowl mix together all the dry ingredients.
Add your buttermilk (or yogurt and milk) and using your hands very gently mix to combine. You don’t want to work the dough at all, just mix it until you don’t have any dry patches of flour left.
Turn your dough out onto a baking tray lined with baking paper.
Shape it into a ball, you can sprinkle the top with more oat flakes if you like and cut a deep cross into the top.
Bake for about 45-60 minutes. You want it to have a deep golden colour and a skewer should come out clean when inserted into the middle.
