Hannah is someone who has worked with BIG brands and BIG businesses, she has experienced turning a business around or introducing a new crowd to a iconic establishment. Hannah is currently the Director of Communications & Marketing for Corbin & King and in this one hour session we will be tackling the all there is to do with MARKETING!

Hannah's career in hospitality began with Morgan's Hotel Group (now acquired by SBE), working across several roles over six years, eventually becoming Assistant Operations Manager for St Martin's Lane and Sanderson hotels. It was there that she discovered a passion for marketing and the company helped her retrain in this discipline. Hannah went on to progress in marketing with roles at D&D London, The Criterion Restaurant and Kettner's (which is where Natalia & Hannah met!) before becoming Director of Marketing at aqua restaurant group. She was at aqua for six years, opening two restaurants in The Shard and responsible for the Argyll Street venue. Hannah joined Corbin & King in 2019 as Director of Marketing and Communications for the group, overseeing all marketing and PR functions over eight restaurants.

Studies show that women consistently undervalue and undersell themselves and that the gender gap is, in part, a confidence gap. In this practical, interactive session we will do a deep dive into ways to combat our confidence demons.

Want to get better at asking for what you want, saying no to things, and how to stop apologizing (yep, if that's you, you are not alone!)? You'll come away with quick and easy tools to help you. And something to help you go into challenging situations with more self-belief. There will be time to meet people and network woven into the session and you'll come out of it ready to own the room and boss your life just that little bit more than you do already.

Meg founded the brand back in 2008, to bring the beautiful spirit to the bars, shop shelves and palates of a global audience. Kami won a trip to Peru following a bartending competition, joined forces with Meg and Nati, and never looked back. And Nati, well without Nati there would be no pisco. She is the master distiller, sommelier and vigneron.

Meet Lauren Barnett, founder of Home Hospitality, who specialises in a thoughtful and personal approach to working with people and businesses to find the right fit for everyone.

Lauren will be presenting her top list of tips for job hunting, and hunting for your team in the time of COVID-19. But we want to hear from YOU! So we’ll be asking you to submit your questions for Lauren ahead of time, so she can give you the best answers to get you back in the workplace.

Pivoting

The dreaded P word. How many times have we heard that during lockdown!

Throughout the day we’ll hear from a group of women who have pivoted and made changes in their lives - for professional or personal reasons.

Speakers include teaching assistant turned Great British Bake Off contestant, cook book author and food stylist Benjamina Ebuehi. Restaurant chef turned primary school chef and co-founder of Chefs in Schools, Nicole Pasani, and advertising, turned restaurant marketing turned cafe owner, Freddie Janssen to name a few! All of these ladies have pivoted in their lives, from one job to another or even one industry to another.

As we all evaluate our future, we hope these stories will give you the strength and inspiration to make a change if needed, or pivot your thinking to get to that next stage in your career.

Wednesday 17th June, journalist and food writer Melissa Thompson aka @fowlmouthsfood will be hosting a talk with three black women working in the hospitality industry. In case you missed Melissa’s incredible piece in the recent Vittles newsletter, please have a read. Melissa has been highly applauded for her honest and educational social media content on the matter.

Yes this talk comes on the heels of the recent rise in the ongoing conversation; Black Lives Matter, but social and systemic racism exists within our industry, and we need to understand why and how to combat it.

Melissa will be joined by 2018's Front of House, Young British Foodie award winner Laudy Gibba-Smith dialling in from Hong Kong, London based chef of Zoe Adjonyah of Zoe's Ghana Kitchen and Liverpool cafe owner, Kim Sowah of Coffee & Fandisha

Mirabeau has been an inspirational self-made success story, with the wines now sold in 50 countries and being the leading brand in 3 major markets, including the UK.  Jeany has put her attention to detail to work on the Mirabeau range, which is lauded for its many beautiful design details and now also includes a small batch Rosé Gin. Under her direction she has built a creative presence for all things Provence lifestyle on the family brand’s various digital platforms and is regularly featured in the lifestyle press. Jeany also has a high profile as a female founder and has recently been named as one of Code Hospitality’s 100 most influential women of this year.

1 tin of butter beans, or cannelini beans

3tbsp tahini

1 preserved lemon

A handful of wild garlic (or normal garlic)

Back in the summer of 2019 we took a train down to the coast - Brighton. The dining scene in Brighton has been growing tremendously over that last several years, and it is down to people like Dawn Sperring as to why. The Chilli Pickle is Inspired by Dawn & husbands Alun’s Indian travels “From the tropics of Tamil Nadu & Kerala, the wetlands of West Bengal, to the Rajasthani desert plains.” Alun is a classicaly trained chef, while Dawn packed in her job working for the London Ambulance Service to take the reins of front of house. Twelve years on, they have had some amazing ups and downs - but are still going strong and a huge part of the hospitality fabric of Brighton.

Dawn will be popping onto The Shift Show with us to teach us to make their famous Onion Pakora’s!

If you’d like to cook along with us, you will need…

3 Red Onion halved and fine sliced

6 Spring Onions. Green part only cut into 2cm sticks

Fresh Coriander 2 Tbsp

Batter

Chickpea Flour 4 Tbsp

Rice Flour 2 Tbsp

Potato Flour 2 Tbsp (if you can't get this make up with more rice flour)

Baking Powder 2/3 tsp

Salt 1 tsp

Madras Curry Powder 1 tsp

Ice Cold Water - enough to add to make a smooth batter

Roasted Cumin Seeds 1.5 tsp

Roasted Coriander Seeds 1.5 tsp

Fennel Seeds 1 tsp

Dry Red Lentils 2 tsp

Chilli Chat:

Madras Curry Powder

Chilli Powder

Amchur Powder - if you have

Salt

2 parts Madras Powder to 1 part Salt and 1 Part Chilli Powder

Be sure to prep all your ingredients ahead of time, as well as dry roast your Cumin, Fennel and Coriander Seeds until they are fragrant. Leave to cool. Place seeds in a Pestle and Mortar with the Red Lentils and crush to a coarse mix.

We met Anna last year when her and Lauren Wall, cooked for our first IN STORIES dinner in Manchester at Trove in Ancoats. Anna is sous chef at the sister property to Trove, erst.

After attending culinary school and working as a chef in Copenhagen for several years, Anna moved to England to join the opening team at erst. Anna grew up with a southern American mother and a Danish father, whose two food cultures have shaped who she is as a chef and how she cooks. 

Anna says “I love the hominess and sense of comfort from southern cooking and the simple and minimal aesthetic of the Nordic cuisine.”

While working at erst Anna met Sommelier Kim Mcbride (erst, The Creameries). Together they started Supp-HER, a supper club  powered by women in support of various women’s organizations. Their last event was held to raise funds for Trafford Rape Crisis. They plan to host many more when the current climate allows it!

Anna will be joining us on Tuesday’s episode of The Shift Show. We’re going to be preparing a fish dish and talking about how the fishing industry is hurting during this time, how you can support and learn to make this delicious dish.

If you’d like to cook along you will need:

1 skate wing filet

150-200g peas (frozen are fine)

1 lemongrass shoot

1 shallot 

2 garlic cloves

Handful wild garlic (or mint, parsley, basil Etc)

300-400 ml of chicken, fish or vegetable stock

About 50g butter 

1 lemon

Handful of capers 

Neutral oil for frying

Montreal born and bred, Larah Bross, has taken the Scots by storm with her “Fill your hole” slogan, and asking customers to #Jewitup at her collection of bagel shops; Bross Bagels. We had the absolute pleasure of meeting her, interviewing her and then going out on the town with her a couple months ago. And we cannot wait to see her again down the camera of our phone!

Abby Swain is one of our very dear friends from my (Natalia) time in NYC, and I am so excited she has agreed to come on The Shift Show!

Abby graduated with an Associate’s Degree in Baking and Pastry Arts at the Culinary Institute of America before moving to Paris to further her education at Le Cordon Bleu where she received a diploma in Patisserie. After graduating, she staged at Sucre Cacao where she acquired the grit and dedication required to succeed within this industry.

Upon returning to the United States, Abby worked under the tutelage of Karen DeMasco at Craft New York and learned how to integrate local and seasonal ingredients into Craft’s dessert menu. She later relocated to Atlanta in 2008, where she was presented with a unique opportunity to help open Bakeshop as a sous chef for Jonathan St Hilaire. Here, she had the chance to focus on the complexities of bread production. Soon after, Abby stepped into her role as pastry chef for Scott Serpas of Serpas True Food in Atlanta. Then, in 2011, excited for new challenges, Abby returned to New York City and took on the position as pastry chef of CraftBar, and a year later was promoted to pastry chef of both Craft and CraftBar.

Today, Abby Swain is the Executive Pastry Chef of Tom Colicchio’s Temple Court, a fine-dining American restaurant within The Beekman, an iconic and landmarked hotel in lower Manhattan. Here, Abby is applying all the knowledge acquired from her experiences to create innovative desserts influenced by classic New York cuisine from the 19th and 20th centuries for Temple Court, The Bar Room, private events and in-room dining.

Saima Thompson is the founder of Brockley restaurant, Masala Wala Cafe. In April 2018 she was diagnosed with stage 4 lung cancer at the age of 29, and over the last 2 years she has had various palliative treatments from multiple rounds of chemotherapy, targeted therapy drugs and immunotherapy. At present, Saima is running out of treatment options on the NHS, her health is deteriorating and her cancer has spread to her brain and increased in her liver. Pippa Middlehurst aka Pippy Eats, is an Asian food enthusiast and cancer researcher. Two things you might not put together, but her close attention to detail - needed in a lab - and curiosity around Asian spices and flavours have made it a recipe worth repeating. Hailing from Scotland, Anna is best known for being at the pastry helm of London’s Lyle’s & Flor. She’s a lover of bread and all things hospitality, and we can’t wait to have her on the show.

Everyone has channelled their inner sourdough baking skills recently, but we thought we’d try a different kind of bread…Irish Soda Bread!

You’ll need a few ingredients in order to bake along with us…

  • 500g wholemeal flour or 250g of wholemeal and
    then a mix of whatever other flours you have - if you can’t get your hands on some wholemeal, we can improvise! You don’t need to develop any gluten at any point so it should be ok.

  • 100g oats

  • 2 tsp bicarbonate of soda

  • 2 tsp salt

  • 400g of buttermilk (or 200g plain yoghurt and 200g milk)

  • baking tray

UPDATE ON FESTIVAL PROCEEDINGS

Hello!

First of all THANK YOU if you bought a a ticket to be at L.O.R.’s first festival, IN SERVICE.

It will be a true celebration of the women cultivating change and contributing to the ever growing world of hospitality.

As with any service, opening or event, things can be going so smoothly and then out of nowhere we need to pivot and readjust. A table of 4 all of the sudden becomes a 10, a surprise VIP guest walks in, two team members call out sick, the fire alarm goes off, your bread doesn’t arrive - or in this case, a global pandemic.

Initially I was feeling positive, fearless and excited about pushing ahead with IN SERVICE, but as more news has unraveled I am very concerned we will be in lockdown by the time the 30th comes around. I have no doubt having us all in a room will be inspiring, but given the current state of affairs it is not the socially responsible thing to do.

Therefore, it is with a tinge of sadness, but a huge heap of hope, that

I have made the hard decision to postpone the festival.

Not the C word (cancelled), postponed.

No matter what, IN SERVICE 2020 will happen.

All purchased tickets will be automatically rolled over to the new date, which is lucky considering we are almost sold out :) If you are unable to make the new date, then you are able to apply for a refund or roll the credit over to a future L.O.R. event.

In the meantime, please keep an eye on our Instagram, as we work on bringing you some virtual content to stay connected to L.O.R. and to each other. If you are a business owner or employee and are feeling worried at this time, please reach out -

we are here to help as much as we can.

Together we will all get through this very hard time for our industry. As someone whose entire business is based on events, I am feeling the heat and I know all of you will be too.

Margot Henderson & Anna Haugh

We are SO excited to be sitting down with these two chefs who are helping shape this industry for the better. Anna Haugh is taking the culinary world by storm, including taking part in the new series of Ready, Steady, Cook! Her Chelsea restaurant Myrtle, takes inspiration from her Irish roots. We’ll be talking favourite haunts, childhood food memories, what she drinks on a night out and the best part about being a chef. Then we’ll sit down with pioneer and unstoppable force of nature, Margot Henderson. Rochelle Canteen is a stalwart for all of us working in the industry. We’ll be asking Margot where she likes to let her hair down, the best part of her job and the parts she wishes she could do less of, how the industry has changed over the years and how it still needs to. Expect food, wine, a little bit of swearing and a whole lot of fun!

Gemma Bell & Jill Stein

We’ll be kicking off the day with two incredible women from the industry, Jill Stein (Rick Stein Restaurants) and Gemma Bell (Gemma Bell & Co.). These two hospitality mavens both share a strong front of house background, but over the years have moved off the floor, and into a different role under the hospitality umbrella. Jill was the mastermind behind the decor for all Rick Stein Restaurants, and catapulted herself into a career of interior design alongside their restaurant empire. Gemma Bell moved from floor work into an extremely successful PR and communications career, setting up Gemma Bell & Co. in 2011. Between these two powerhouses, we’ll cover their stories, how to connect with guests through face to face interaction as well as media, what ambiance and design can contribute to a space and so much more!


Sarit Packer & Romy Gill MBE

We are so excited to meet two women who have made major contributions to the world of food and restaurants. Between the two of them they have written four cookbooks, a successful podcast, a new TV show, four restaurants and received a nod from the Queen. We’ll be sitting down with one half of the Honey & Co. conglomerate, Sarit Packer and the much lauded chef Romy Gill discussing their journeys and how they ended up where they are today. We’ll hopefully get some career advice (reckon they will a few good soundbites), why they love this wild and crazy industry and what they are doing to support women entering it.

In this 10 minute food meditation session, founder of Salty Studios, Maud will allow us to take a moment to take our minds back to our bodies and focus on the present. After taking one piece of fruit in front of you into your hand, you will be guided through various steps, observing your chosen piece of fruit from every angle. This process enables us to become more mindful about food and the process of eating, and we reflect on where our food comes from as well as how lucky we are to have food on our plate.

Last year we (Freddie & Natalia) started what will now become a series, of L.O.R. x Snackbar In Stories dinners. Freddie cooks with her band of awesome women, Natalia talks to a host of ladies from across the London restaurant scene in between each course. It’s part dinner party, part talk show. 

On this occasion we're chatting about, confidence. What is it, how do you have it, where can I get more of it, what to do when it gets knocked down and more. Joining us to share their wisdom are four ferocious females who know a thing or two about the highs and lows of confidence;

Come join us for our second In Stories dinner in Margate!

In Stories is our dinner series that is part talk show, part dinner party. We have a meal prepared in a female operated restaurant, and hear from women on a particular topic.

This month we are at one of my (Natalia) all time favourite restaurants, Bottega Caruso. Simona spoke at our first event in Margate, and we are so lucky to have her cook some amazing Italian food for us, before she goes on maternity leave with her second child.
